As soon as Snow Leopard finishes installing, Software Update will appear with all kinds of updates to install.

The only way to get to your Mac's maximum supported OS is to first install Snow Leopard from the DVD. For a short while, you could buy it on a USB installer directly from Apple, but those are no longer available. You need to start here because Lion was never available on disk. That Mac originally shipped with Tiger, 10.4.x, so you can purchase the $20 Snow Leopard retail disk to get started. It's not that the hardware is so different it can't run Snow Leopard, but rather the Mac itself won't allow it to install. So I'm thinking that may be the same main difference.

Nice, but it will then no longer boot to the Snow Leopard disks it came with! The only way to get Snow Leopard back onto the Mac is to do a restore from backup. If you were to install the firmware update, these Macs will then support Internet Recovery Mode. There was one last firmware update for it that came out shortly after the release of Lion. As notes, the hardware differences between them are very slight. The 20 Mac Pros are both designated as 5,1 models. It may be one of those firmware restriction things Apple does on occasion. That, and they're classified as having been shipped with Lion. Given my "2010" model won't boot to the 10.6.3 retail disk, I would think it's extremely likely a 2012 model won't, either. I've tried booting to the retail 10.6.3 disk, and it won't do it.

The gray disks it came with are Snow Leopard, 10.6.4. My 2010 Mac Pro actually has a mid 2011 build date, which is shortly before I purchased it.
